On the 8th day of Christmas the maids have been a milking in the South Downs National Park to bring you the best local cheese.
Plumpton College, known for its agricultural courses, is located at the foot of the South Downs, in East Sussex. Wales Farm is the colleges’ own commercial farm and produces a variety of artisan cheese.
The range is made up of three cheeses: Lynchetts Soft, Woodside Blue and Lords Burgh and owe their distinctive style, texture and flavour to being made in small batches using traditional methods. Find them at Lewes Food Market every Friday from 9:30am-1:30pm, Market Tower, Lewes.
In a similar ‘vein’ High Weald’s cows’ milk is supplied by the 280 dairy cows on the farm, which is just 25 yards from the cheese vat. The sheep milk comes from organic farm Orchid Meadow Farm and various small farms in the south of England.
Vegetarians will be happy to hear that both cheeses use vegetarian rennet and pasteurised milk. And with the cows milked just a few metres from where the cheese is made, they’re a great option for ethically conscious and local food fan.
